Jangek refers to a dish based on the cow's skin especially of the cow's neck and leg. The skin is grilled then scraped till clean, then smoked till dry. Before cooking soak the skin before hand to soften it.
The ingredients are chilies, turmeric and red onion to be finely grounded, and lemon grass to be crushed. Mix all the ingredients with Jangek, add in thick coconut milk and cook till the gravy thickens then serve.
