Cencaluk is made of shrimp, said to be high in protein. Shrimp is found at certain seasons at Klebang Beach, Limbongan, Tanjung Kling and at various other Melaka's beach fronts.
The many steps in the making of cencaluk must be executed thoroughly to ensure the quality of the dish is guaranteed. The shrimp is mixed with salt and rice and placed in a small jar with the mouth of the jar covered with a clean piece of cloth, to be preserved for three days. Some cencaluk makers add in a little boiling water from the rice being cooked to increase the food's deliciousness. When served the cencaluk is mixed with slices of red chilies, big onion and ginger with sprinkles of lime juice.
