PICKLED FRUIT

Sinamu is pickled fruit as appetizer. This traditional food is popular among the Rungus ethnic in the Kudat District. The fruits used are unripe mango, papaya, jackfruit, bambangan, or longgom (both are from the same family of sour mango).

Place the fruits into a jar or an airtight container. Then put in the finely grounded galangal and salt. Close the jar or container tightly and preserve for about a month. If using mango soak the mango in hot water or cook until half cooked before hand.
